1/4 cup dried of currants
1/8 cup dried of mango’s
1/8 cup of dried cherries
1/2 cup of butter
2 tablespoons of candied citron
1/2 cup of all purpose flour
1/4 cup of dark rum
1/4 cup of separated dark rum
1/4 cup of packed brown sugar
1/4 cup of chopped pecans
1/4 teaspoon of salt
1/4 cup of unsulfured molasses
1/4 teaspoon of ground cinnamon
2 tablespoons of milk
1/8 teaspoon of baking soda
You will also need: parchment paper and cheesecloth
Soak the citron, cherries, currants, mango’s, and cranberries in the rum for 24 hours. Store at room temperature in a tightly sealed container. Preheat the oven to 325 degrees, then grease a 6×3 inch loaf pan, or you can use a round pan. Line the pan with parchment paper. Cream the butter and sugar until you get a fluffy texture, then add and beat in the egg. In a separate bowl mix the flour, salt, baking soda, and cinnamon. Gradually, mix into the butter mixture, add molasses and milk and mix. Add the fruit and nuts and stir, transfer to the prepared loaf pan or round pan.
Bake for 45 minutes and leave to cool for 10 minutes. Pour over 2 tablespoons of rum. Cut a piece of parchment paper and cheesecloth big enough to wrap around the fruitcake. Moisten the cheese cloth with a tablespoon of rum. Put the cheesecloth on top of the parchment paper and wrap the cake. Put in an airtight container and age for at least 10 weeks.
